Catch a taste of something fishy

As well as the spectacular vision of the tall ships reaching our shores this weekend for the Belfast Maritime Festival, local taste buds are also in for a special treat, all courtesy of Northern Ireland Seafood.

Celebrity chef Noel McMeel of Lough Erne Golf Resort will be hosting a series of free cooking demonstrations from 12-5pm in the NI Seafood festival marquee on Queen’s Quay beside the Odyssey.

Noel, know for his success in The Great British Menu TV series, will highlight just how quick and easy it is to make some extremely tasty alternative fish dishes. Here’s one of his recipes.

Fresh Lough Neagh Pollen with tomato and fennel essence

Serves 6

Ingredients

n 2 x 4oz fillets of Pollen

(Always ask your fishmonger to pin bone, fillet and scale the fish)

Essence ingredients

n 500g dark-red, over-ripe tomatoes, coarsely chopped

n 1 fennel bulb, trimmed and chopped

n 2 celery sticks, chopped

n 1 large shallot chopped

n 1 garlic clove, thinly sliced

n 25g light soft brown sugar

n 1 tsp each fresh basil, chervil and coriander leaves

n 20ml pernod

n 1 tsp tabasco

n tsp Worcestershire sauce

n pinch of cold water

n Salt and cayenne pepper

To garnish

n 4 basil leaves

n leaves of 1 coriander sprig

n 1 ripe tomato, skinned, seeded and diced

n lime segment

Method

Day 1

n To make the essence, pure all the ingredients in a blender until smooth.

n Transfer to a chinois or very fine sieve placed over a bowl and put in the fridge

n Leave to strain overnight.

Day 2

n Season the fillet of pollen and sear on each side until light brown in colour.

n Do not overcook. Cut into 12 one inch pieces. Heat the infusion until it is warm and add the pollen.

n Assemble

n Transfer the essence into a pouring container.

n To serve, put two pieces of pollen and lime segments into shot glasses with the herbs,

nPour the essence over them and garnish with diced tomato flesh and herb leaves.

n Serve chilled.
