My own preference was for tripe — and I would like to be able to purchase it locally

The Roamer’s reminiscing (Feb 26) about Katherine Whitehorn’s recipes for those living in bed sitters decades ago made my mouth water — not least for tripe and onions.

My own preference was for tripe poached in milk rather than boiled in water but, alas, our difference of opinion is now merely academic as some younger butchers haven’t even heard of the delicacy.
