Galgorm Collection has officially opened its new-look boutique hotel, ‘The Rabbit’, formerly known as the Templeton.

With a menu inspired by the American Deep South, featuring seasonal, local produce and the finest cuts of meat, The Rabbit is the perfect den for couples, friends and families to escape, with a menu designed for sharing.

The Rabbit Bar & Restaurant seats up to 180 and boasts a large outdoor terrace for al fresco dining, offering stunning views of the property’s newly installed garden.

Galgorm Collection acquired the former Templeton Hotel last year and is currently undergoing a £7 million investment. Extensive refurbishment work has been undertaken to upgrade the hotel’s 24 guest rooms and develop a new outdoor spa offering, due to open later this year. The Rabbit Bar & Restaurant refurbishment represents an investment of £2.5 million into the property.

In addition to the accommodation, spa and bar and restaurant offering, a new banqueting suite and wedding venue, ‘The Loft’, is also set to launch later this year at The Rabbit. This exclusive-use venue offers unabridged luxury in a magical setting. With high vaulted ceilings adorned with twinkling feature chandeliers, marble dining tables, dramatic fireplaces and a stunning romantic lake view from the spacious outdoor terrace, the fairy-tale setting is the ideal backdrop for a picture-perfect wedding day.

The newly named and refurbished property adds to Galgorm’s already impressive suite of hospitality investments, which includes £1.5 million in Belfast-based restaurants’ Fratelli & Café Parisien and the £600,000 purchase and refurbishment of the Castle Kitchen + Bar at Galgorm Castle Golf Club in 2018.
