Collagen, often associated with supporting skin, joints and overall wellbeing, blends seamlessly into the mixture, making it a fuss-free addition to a traditional recipe. The batter works just as well with dairy or plant-based milk and can be easily adapted depending on whether you’re opting for a wholesome breakfast or a more indulgent treat.

Collagen Pancakes (Serves 1–2)

Ingredients:

  • 100g plain flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1–2 tbsp unflavoured collagen powder
  • 1 tbsp sugar, honey or maple syrup
  • 1 medium egg
  • 150ml milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • Butter or oil, for frying

Method:

  1. In a mixing bowl, whisk together the flour, baking powder, salt and collagen powder to ensure it is evenly combined.
  2. Add the egg, milk, vanilla extract and sweetener, whisking until the batter is smooth and pourable. If needed, adjust the consistency with a splash of milk or a sprinkle of flour.
  3. Heat a non-stick frying pan over a medium heat and lightly grease.
  4. Spoon around two to three tablespoons of batter into the pan for each pancake. Cook for one to two minutes, until bubbles appear on the surface, then flip and cook for a further minute until golden.
  5. Serve warm with your favourite toppings.

For a balanced breakfast, pair with Greek yoghurt and fresh berries. If you’re leaning into the indulgence, try sliced banana and nut butter. A drizzle of maple syrup or honey adds a classic finish, while lemon juice and a dusting of icing sugar keep things traditional.
